What you’ll need
- Large pitcher or drink dispenser. For batch cocktails

The batching rules
- Multiply everything except ice. Ounces become cups, at the same ratio.

- Add water for dilution. A shaken or stirred drink picks up roughly 20 to 25% of its volume as water from the ice. For a batch you will serve over ice, add about 15%. For a batch served straight from the fridge with no ice, add the full 20 to 25%.
- Hold back the fragile parts. Citrus juice is at its best the day it is squeezed, add it the morning of. Carbonation goes flat in a pitcher, add it to each glass. Egg white and cream do not batch, skip them or add per drink.
- Chill hard before serving. A batch straight from a cold fridge needs less ice, which means less further dilution.
- Taste and adjust. Scaled recipes drift. Taste the finished batch and correct with a little more citrus, syrup or water.

Bourbon cider punch (serves 12)
- 3 cups bourbon
- 6 cups apple cider
- 1½ cups fresh lemon juice
- ¾ cup maple syrup
- 1 tablespoon Angostura bitters
- 1½ cups water (dilution)
- To serve: over ice, with an apple slice and a cinnamon stick
Combine everything except the lemon juice up to 2 days ahead. Add the lemon the morning of. Serve from a dispenser over plenty of ice.
Cranberry mimosa (serves 10)
- 3 cups 100% cranberry juice
- 1 cup fresh orange juice
- ½ cup orange liqueur (optional)
- 2 bottles dry sparkling wine, chilled
Mix the juices and liqueur ahead. Pour 2 to 3 oz into each glass and top with sparkling wine at the table, never batch the wine in. Garnish with cranberries.
Spiced rum punch (serves 12)
- 3 cups dark or spiced rum
- 4 cups pineapple juice
- 2 cups orange juice
- 1 cup fresh lime juice
- ½ cup demerara syrup (2:1 sugar to water)
- 1 teaspoon Angostura bitters
- 1 cup water (dilution)
- Grate of fresh nutmeg over each glass
Batch everything but the lime up to 2 days ahead; add lime the morning of. Serve over crushed ice.
Serving a crowd
- A drink dispenser with a spigot beats a pitcher, guests serve themselves and you never refill a glass.
- Big ice, not small. Large cubes or a block melt slower, so the punch in the dispenser does not get weaker over the afternoon.
- Label it, especially if there is also a non-alcoholic punch, they can look identical.
- Plan volume: about two drinks per adult over a gathering. A 12-serving batch covers 6 people comfortably.
