Why the ice ring matters
A bowl of punch over a bag of ice cubes is watered down within the hour. Freeze some of the punch itself in a bundt pan or a ring mold — with cranberries, orange slices and rosemary suspended in it, and as it melts it dilutes the punch with more punch, not water. It also looks far better and it lasts most of the afternoon. Make it two days ahead.
What you need
Punch base (make ahead)
- 6 cups 100% cranberry juice
- 4 cups apple cider
- 2 cups orange juice
- ⅓ cup fresh lime or lemon juice
- ⅓ cup honey or maple syrup, warmed to dissolve (taste first, you may want less)
- 3 tablespoons grated fresh ginger, steeped 20 minutes then strained (or 1 cup strong ginger tea)
To serve
- 4 cups ginger ale or sparkling water, chilled
- 1 pint raspberry or orange sherbet (optional, for the float)
- Ice ring: 4 cups of the punch base, plus cranberries, orange slices and rosemary, frozen in a ring mold
How to make it
- Two days ahead: make the full base. Pour 4 cups of it into a ring mold with the cranberries, orange and rosemary, and freeze. Refrigerate the rest.

- To serve: pour the chilled base into a punch bowl. Unmould the ice ring by dipping the mold briefly in warm water, and float it in.

- Add the sparkle, ginger ale or sparkling water, just before guests arrive, so it does not go flat.
- Scoops of sherbet on top for the classic frothy float, if using.

The details that decide it
- 100% juice, not “cocktail.” The base should taste a little too tart on its own, the sparkle and sherbet sweeten it.
- Sparkle last. Carbonation added to the bowl an hour early is flat by the time people drink it.
- Taste the honey. Cider and orange juice bring their own sweetness; you may not need much.
- Keep a backup jug of base in the fridge to top up the bowl.
Variations
- Warm: skip the sparkle and sherbet, warm the base with cinnamon sticks and cloves, and serve from a slow cooker.
- Spiked, on the side: keep the punch non-alcoholic and set out a bottle of bourbon or spiced rum so adults can add their own, about 1 oz per cup.
- Sparkling wine version: for an all-adult crowd, replace the ginger ale with a dry sparkling wine or a non-alcoholic sparkling.
Scaling
This recipe makes about a gallon, which serves 20 in punch cups. Double it for a larger group and use two bowls rather than one enormous one, so people at both ends of the table can reach it. It is the crowd-scale counterpart to our single-serve Thanksgiving mocktail, and it sits at the same station as the cocktails.
