No cooking at all
- Cranberry salsa over cream cheese — chop fresh cranberries with a little sugar, jalapeno, cilantro and lime; spoon over a block of cream cheese. Serve with crackers. Bright, festive, 10 minutes.
- Whipped feta — a block of feta, a few tablespoons of cream cheese and a glug of olive oil in a food processor until smooth. Spread on a plate, drizzle with honey. That is it.
- Cream cheese and pepper jelly, a block of cream cheese with a jar of red pepper jelly poured over. Two ingredients, and the jar has been doing this job for decades.
- Marinated mozzarella or feta, drained cheese tossed with olive oil, lemon zest, chili flakes and herbs; left an hour. Serve with toothpicks and bread.
- Prosciutto and melon or pear, wrap, plate, pepper. Done.
One can of crescent or puff dough
- Cranberry-brie bites, press crescent dough into a mini muffin tin, add a cube of brie and a teaspoon of cranberry sauce, bake 12 to 15 minutes. Assemble a day ahead, bake fresh.
- Baked brie, a wheel of brie wrapped in puff pastry with jam and nuts, baked 25 minutes. One of the highest-impact things you can do with 5 minutes of assembly.
- Pesto pinwheels, puff pastry spread with pesto and parmesan, rolled, sliced and baked. Freeze the log and slice from frozen.
Assemble-ahead boards
- A small grazing box, a scaled-down charcuterie board, built in a shallow dish the day before.
- Olive and pickle plate, a few kinds of olives, cornichons, marinated artichokes, pepperoncini, decanted from jars into a nice dish. Zero effort, and it is the sharp, briny thing the cheese board needs.
- Dips from a tub, upgraded, stir fresh herbs, lemon and cracked pepper into store-bought hummus or tzatziki, top with olive oil and paprika, and nobody asks where it came from.
What to skip when you are busy
Anything fried, anything that needs to come out of the oven hot at a precise moment, anything with more than a handful of components, and anything you have not made before.
