Cranberry Sauce

Four ingredients and twelve minutes. The easiest upgrade on the whole Thanksgiving table.

Ingredients
  

  • 12 oz fresh or frozen cranberries 340g
  • 3/4 cup granulated sugar 150g
  • 1/2 cup water or orange juice 120ml
  • 1 orange, zested and juiced
  • 1 pinch salt

Equipment

  • Medium saucepan
  • Wooden spoon
  • Measuring cups
  • Serving bowl

Method
 

Combine
  1. Put the cranberries, sugar, water or juice, orange zest and juice, salt, and any whole spices in a medium saucepan.
Simmer
  1. Bring to a boil, then reduce to a simmer. Cook 10 to 12 minutes, stirring now and then. The berries will pop and the liquid will thicken slightly.
Stop early
  1. Take it off the heat when most of the berries have burst but a few are still whole, and the sauce still looks loose. Stir in any liqueur now.
Cool and chill
  1. Cool to room temperature, it thickens noticeably as it does, then refrigerate. It reaches its final set after a few hours cold.
