Sourdough Crispy Breadsticks

minutesBreadsticks are a side item or snack at many restaurants. Crispy, crunchy, herbs, garlic, these are the hallmarks of great breadsticks. This recipe uses the sourdough discard that you collect all week long while feeding the sourdough.
Ingredients
300g sourdough discard (or as much as you have).
200g flour
60g butter
1 tbsp Italian Herbs (or any herb that you like or grated parmesan cheese)
1 tbsp dried garlic powder
1 tsp salt
1 tsp baking powder
Directions
- Mix the flour, salt, garlic, baking powder, herbs in a bowl.
- Melt the butter in the microwave and add to the mix, stir to incorporate.
- Add the sourdough discard and mix until the dough comes together. If necessary add a tablespoon of water.
- Roll into a ball and return to the bowl, cover with a tea-towel and allow to rest for 1 hour or overnight.
- Preheat the oven to 190 C.
- Dust a work surface with a little flour and tip out the dough.
- Divide into 3 portions and roll each to 0.5mm thickness and a length of 15 to 20 cm.
- Slice into strips 1 to 1.5 cm wide and twist them a few times to incorporate a spiral.
- Place onto a pre-greased tray (use foil or parchment paper on the tray if you prefer).
- Bake for 15-20 minutes until golden brown and crispy, cool on a wire rack.
